For this task we use an Acrobat Pro plugin: "Quite a Box of Tricks", from Quite Software. http://www.quite.com/box/ It's very good at RGB to CMYK. Almost an on-the-fly process. Uses, I believe, the sRGB space as the conversion point, though I'm no expert on this. With virtually all the RGBs we get, it does a perfectly adequate job, and well. Plus it's not very expensive; certainly compared to other more fully featured PDF editors. It does a few other things as well, like shrinking PDFs for emailing/proofing.
